The Story

Before the canneries and the cold storage and the container ships, there was just the fish.

Bariles. That is what General Santos calls the yellowfin tuna, borrowed from the Spanish word for barrel, because that is what a full grown one looks like when it comes over the side of the boat.

The boats leave Sarangani Bay in the dark and work the deep water off Mindanao by handline, the old way, one fish at a time. What they land is graded on the wharf at first light and moves out the same day. A bariles pulled from Philippine water can be on a plate in Tokyo before the week is over.

That is the part most people never see. Gensan is not a postcard town. It is a working port, loud and wet and awake before everyone else, and the whole city runs on what those boats bring back.
