Island Series – The Chili Club Tee

There is a reason Bicol cooks the way it does.

Chili grows well in Albay. So does coconut. Two crops in the same soil, and generations of cooks who worked out that one carries the other. Coconut milk does not cool the heat. It spreads it, holds it, and makes it last long after the bite.

That is laing, taro leaves simmered down in gata until they turn almost black, with siling labuyo folded through. That is sinilihan, which the rest of the country started calling Bicol Express after the train that ran from Manila to Legazpi. In Bicol it never needed a nickname. It was just how you cooked pork.

Outsiders order it and negotiate. Bicolanos order it and finish.

The coordinates on the front are 13.2548° N, 123.6861° E. Not the province. Not Legazpi. That is Mayon itself, the most active volcano in the country, still smoking above the farms that feed it. Anyone raised under that mountain understands the arrangement already. You live beside the fire. You learn to cook with it.

The Chili Club Tee is for the Bicolano abroad who cannot find sili hot enough. For the one who brings their own bottle to dinner. For everyone who has sweated through a bowl of laing and asked for more rice, not less chili.
